TOURNE KNIFE               

 

                The name says it aLl. A tourne knife is used for cutting the surface of tourneed vegetables facile for the user due to its curved, short blade. A paring knife however, can be used for the same purposes. This leads to my next point:

                A Tourne knife has been spoken of before as a type of paring knife due to its small, manageable size and different blade types such as the bird’s beak blade. In fact, ‘Bird’s Beak’ is a more common name for Tourne knife. It is used for small and delicate cutting on fruits and vegetables. Unless you do a lot of that, it is not a knife necessary to have in your casual everyday kitchen.

 

WHAT 'TOURNE MEANS'

 

                Tournee is French for ‘turned.’ The name was given due to the knife’s half-moon shape. It is the shape of the blade and the knife’s small size that makes it unique. With this knife it is even easier to agilely peel or cut delicately.

                Tourne is also a French cut. Fruits or vegetables are cut into little football shapes for a beautiful and fanciful presentation. It can also be used to peel garlic or other fruits and vegetates. A picture of the cut is shown on the right.

 

THE KNIFE'S CUT

 

                Although the tourney knife itself may be easy to handle, mastering a perfect tourne cut is not. It takes lots of practice and patience just like it would take to master any other difficult and delicate cutting technique.
